Ingredients

  • Zest of 1 lemon about 1 tbsp
  • Juice of 1 lemon about 2 tbsp, or bottled lemon juice in a pinch
  • 1 tsp dried oregano or Italian seasoning for a different herb profile
  • 1/2 tsp paprika or smoked paprika for a smoky kick
  • 1/2 tsp salt
  • 1/4 tsp black pepper or red pepper flakes for a spicy twist
  • 2 tbsp fresh parsley chopped (optional, for garnish)

Method
 

  1. Prepare the Chicken: Cut the chicken into 1-inch bite-sized cubes. Pat dry with paper towels to ensure a crisp sear.
  2. Make the Marinade: In a large bowl, whisk together olive oil, minced garlic, lemon zest, lemon juice, oregano, paprika, salt, and black pepper until well combined.
  3. Marinate the Chicken: Coat the chicken cubes equally by tossing them in the marinade. Let it sit for 5-10 minutes (or up to 30 minutes in the fridge for deeper flavor).
  4. Cook the Chicken: On medium-high heat, heat a large skillet. Add the marinated chicken in a single layer (cook in batches if necessary). Sear for 3-4 minutes per side until golden and cooked through (internal temperature should reach 165°F).
  5. Garnish and Serve: Remove from heat, sprinkle with fresh parsley, and serve hot with your favorite sides.
