Ingredients
  

  • 8 oz cremini mushrooms sliced (or a mix of cremini and button for depth)
  • 4 oz shiitake mushrooms sliced (optional for a gourmet touch)
  • 2 tbsp unsalted butter or olive oil for a lighter option
  • 1 small onion finely diced (about ½ cup)
  • 2 cloves garlic minced
  • 8 oz cream cheese softened (use full-fat or low-fat)
  • ½ cup sour cream or Greek yogurt for a tangy twist
  • ½ cup grated Parmesan cheese or Pecorino Romano
  • ½ cup shredded mozzarella cheese
  • 1 tsp fresh thyme leaves or ½ tsp dried thyme
  • 1 tsp Worcestershire sauce optional; use soy sauce for vegetarian
  • Salt and pepper to taste
  • 2 tbsp fresh parsley chopped (for garnish)
  • Optional: ¼ tsp red pepper flakes for a subtle kick

Method
 

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, melt butter over medium heat. Add cremini and shiitake mushrooms, cooking for 8-10 minutes until golden brown. Stir occasionally.
  3. Add diced onion and minced garlic to the skillet. Sauté for 2-3 minutes until onion is soft and garlic is fragrant.
  4. In a large bowl, combine softened cream cheese, sour cream, Parmesan, mozzarella, thyme, and Worcestershire sauce. Fold in mushroom mixture. Season with salt and pepper.
  5. Spread mixture into a 1-quart oven-safe dish.
  6. Bake for 20-25 minutes until golden and bubbly.
  7. Garnish with parsley and serve hot with dippers like crusty bread or veggies.

Notes

  • Storage: Refrigerate leftovers in an airtight container for up to 3 days. Reheat at 350°F for 10-12 minutes.
  • Substitutions: Use Greek yogurt for sour cream or vegan cream cheese for a dairy-free option.
  • Spicy Kick: Add ¼ tsp cayenne or hot sauce for heat.
  • Gluten-Free: Use gluten-free Worcestershire or soy sauce.
