Tequila Lime Coleslaw with Cilantro

Ingredients
  

  • 4 cups shredded green cabbage or 1 medium head, cored and thinly sliced
  • 1 cup shredded red cabbage optional, for color
  • 1 cup shredded carrots or 2 medium carrots, grated
  • ½ cup fresh cilantro chopped
  • ¼ cup red onion thinly sliced (or green onion for milder flavor)
  • ¼ cup lime juice from 2-3 fresh limes
  • 2 tbsp tequila blanco or silver, or apple cider vinegar for non-alcoholic
  • 2 tbsp olive oil or avocado oil
  • 1 tbsp honey or agave nectar for vegan
  • 1 tsp ground cumin
  • ½ tsp chili powder optional, for a kick
  • Salt and pepper to taste
  • ¼ cup Greek yogurt or mayonnaise optional, use vegan mayo for dairy-free

Method
 

  1. Prepare the Vegetables: In a large mixing bowl, combine shredded green cabbage, red cabbage, carrots, red onion, and chopped cilantro. Toss to mix evenly.
  2. Make the Dressing: In a small bowl, whisk together lime juice, tequila, olive oil, honey, cumin, chili powder (if using), and a pinch of salt and pepper. Taste and adjust seasoning.
  3. Combine: Pour the dressing over the vegetable mixture. Toss thoroughly to coat. If using Greek yogurt or mayonnaise, add it to the dressing before tossing for creaminess.
  4. Chill and Serve: Cover and refrigerate for at least 10 minutes to let flavors meld. Serve chilled as a side or taco topping.

Notes

  • Storage: Refrigerate in an airtight container for up to 3-4 days. Store dressing separately for crispness.
  • Substitutions: Swap tequila for apple cider vinegar for a non-alcoholic version. Use agave nectar for a vegan option.
  • Make It Spicy: Add ½ tsp cayenne pepper or a sliced jalapeño to the dressing.
  • Time-Saver: Use a 14-16 oz bagged coleslaw mix to reduce prep time.
  • Pro Tip: Zest one lime into the dressing for extra brightness.
