Ingredients
  

Main Ingredients:
  • 2 oz gin London Dry or botanical gin recommended
  • 1 oz fresh grapefruit juice or store-bought, unsweetened
  • 0.75 oz rosemary simple syrup
  • 2 oz club soda or sparkling water
  • 1 egg white optional, substitute with 1 oz aquafaba for vegan
  • Ice cubes
  • Fresh rosemary sprig for garnish
  • Grapefruit slice or wedge for garnish
Rosemary Simple Syrup:
  • 1 cup water
  • 1 cup granulated sugar
  • 3-4 fresh rosemary sprigs

Method
 

  1. Make rosemary simple syrup: In a saucepan, combine water, sugar, and rosemary sprigs over medium heat. Stir until sugar dissolves (2-3 minutes). Remove from heat, steep for 10 minutes, strain, and cool.
  2. Juice grapefruit: Squeeze fresh grapefruit to yield 1 oz juice, strain to remove pulp.
  3. Shake cocktail: In a shaker, combine gin, grapefruit juice, rosemary simple syrup, and egg white (or aquafaba). Dry shake (no ice) for 15 seconds. Add ice and shake for 10-12 seconds.
  4. Strain and top: Strain into a chilled highball glass with ice. Top with club soda, stirring gently.
  5. Garnish: Add a rosemary sprig and grapefruit slice. Serve immediately.

Notes

  • Storage: Store rosemary simple syrup in the fridge for up to 2 weeks. Batch cocktail base (without club soda) and refrigerate for up to 24 hours.
  • Substitutions: Use vodka for a milder flavor or Seedlip for non-alcoholic. Swap club soda for tonic water for a bitter twist.
  • Pro Tip: Chill a glass in the freezer for 5 minutes for a crisp drink.
  • Batch for Parties: Mix 16 oz gin, 8 oz grapefruit juice, 6 oz syrup for 8 servings. Add club soda when serving.
