Monster Energy Bites Recipe

These no-bake monster energy bites are a quick, kid-friendly snack packed with peanut butter, oats, and colorful M&M’s. Perfect for on-the-go energy or lunchbox treats, they’re naturally gluten-free (with certified gluten-free oats) and ready in just 10 minutes!

Ingredients
  

  • 1 cup rolled oats use gluten-free oats for a gluten-free version
  • ½ cup creamy peanut butter or almond butter
  • cup honey or maple syrup for vegan
  • ½ cup mini M&M’s or chocolate chips
  • ¼ cup mini chocolate chips optional
  • 1 tsp vanilla extract
  • ¼ cup shredded coconut optional
  • Pinch of salt if using unsalted peanut butter

Method
 

  1. Combine dry ingredients: In a large mixing bowl, stir together the rolled oats, mini M&M’s, mini chocolate chips, shredded coconut (if using), and a pinch of salt.
  2. Mix wet ingredients: In a separate small bowl, combine the peanut butter, honey, and vanilla extract. Mix until it's smooth. Microwave the peanut butter for 10 to 15 seconds to soften it if it's too thick.
  3. Blend everything: Pour the wet mixture into the dry ingredients. Use a spatula or your hands to mix until everything is evenly combined. The mixture should be sticky yet stay together when pushed.
  4. From the bites: Scoop out tablespoon-sized portions and roll them into balls using your hands. If the mixture is too sticky, refrigerate it for 10 minutes to make rolling easier.
  5. Chill and serve: The energy bites should firm up in the refrigerator for at least half an hour after being placed on a tray lined with parchment. Serve chilled or at room temperature.

Notes

  • Storage: Store in an airtight container at room temperature for 3 days, in the fridge for 1 week, or freeze for up to 3 months.
  • Substitutions: Use sunflower seed butter for a nut-free option or swap M&M’s for dried fruit to reduce sugar.
  • Make it vegan: Replace honey with maple syrup and use dairy-free chocolate chips.
  • Kid-friendly tip: Crush M&M’s for kids under 4 to avoid choking hazards.
  • Protein boost: Add a scoop of vanilla protein powder for extra protein.
