Combine dry ingredients: In a large mixing bowl, stir together the rolled oats, mini M&M’s, mini chocolate chips, shredded coconut (if using), and a pinch of salt.
Mix wet ingredients: In a separate small bowl, combine the peanut butter, honey, and vanilla extract. Mix until it's smooth. Microwave the peanut butter for 10 to 15 seconds to soften it if it's too thick.
Blend everything: Pour the wet mixture into the dry ingredients. Use a spatula or your hands to mix until everything is evenly combined. The mixture should be sticky yet stay together when pushed.
From the bites: Scoop out tablespoon-sized portions and roll them into balls using your hands. If the mixture is too sticky, refrigerate it for 10 minutes to make rolling easier.
Chill and serve: The energy bites should firm up in the refrigerator for at least half an hour after being placed on a tray lined with parchment. Serve chilled or at room temperature.
